Happy Oatmeal Cookies

Calories are Calories, so keep that in mind when deciding to indulge. BUT, if you're going to have a cookie this holiday season, let's be sure you're consuming good for you nutrients while enjoying a treat! 

(Preheat oven to 335 degrees)

Dry Ingredients:
  • 1 cup Organic whole grain wheat flour
  • 1 1/2 cups of Organic rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 sea salt
  • 1 Tbsp Cinnamon
  • 1/2 tsp nutmeg

Wet Ingredients:
  • 1/2 cup Organic honey
  • 1/2 cup oil (Grapeseed or Olive oil) 
  • 1/3 cup applesauce
  • 1 Tbsp Molasses
  • 1 egg beaten with 1 Tbsp water
  • 1 tsp vanilla

*Added Ingredients of Your Choice:
  • 1/2 cup dried cranberries or raisins
  • 1/2 walnuts
  • 1/2 dark chocolate chips

Preparation:
In a large bowl, mix all dry ingredients together. In another bowl, mix all the wet ingredients together. (Spray nonstick cooking spray in the measuring cup when measuring the honey). Mix the wet ingredients with the dry ingredients. Blend in your choice of *added ingredients. 

The mixture will be sticky, and wet. Spray cookie sheet with nonstick spray. Spoon TBsp amount on to cookie sheet, and slightly flatten with a fork.
Bake for about 15-18 minutes or until golden on the bottom of the cookie.

I like these cookies just the way they are, but if you want to fancy them up for guests, you can drizzle a pretty frosting like effect on top.
  • 1/4 cup powdered sugar
  • 1 TBSP skim or 1% milk
  • 1 tsp Organic cranberry sauce
Blend, and drizzle in a fun pattern over the top of warm cookie, let them cool before serving.
